Are You Sure This Isn't Meat?
Last month co-founder Robbie was invited to host a cooking demo at Royal Hampton Court Palace Show, amongst other wonderful traders and exhibitions.
It was a beautiful sunny day and the event was literally in full bloom. Down at the Dig In Live Theatre, Robbie held two separate demonstrations titled ‘Are You Sure This Isn’t Meat?’ on the topic of seitan making.
Seitan is a popular meat alternative used in lots of vegan and vegetarian cooking. First discovered in Asia, the ingredient is made from vital wheat gluten and kneaded just like bread before being steamed or boiled. It’s used widely because of it’s ability to take on flavour as well as the versatility of texture.
Robbie explained to the crowd how the texture would change depending on how thoroughly the dough was kneaded. The less the gluten is manipulated the softer and more fibrous it will be once cooked, by kneading it for longer it becomes more compact and dense.
The Green Butchers range covers all sorts of plant-based meats with key products being chkn, bacun, beaf minse, burgers and sausages - one of which, our classic Spiced Italian we showcased at the event. When we first launched the product as a menu item for The Green Grill as Robbie explains, ‘it made 70% of the sales of the business’, which proved the real demand for replica meats.
We’ve started the business as a wholesalers, to share our products with other businesses like ours; restaurants, cafes, street food vendors and catering companies who want to include more plant-based items on their menus, whilst still remaining accessible to all their customers; with ‘1 in 3 people in UK now reducing their meat consumption’, Robbie explained. However, for our wonderful customer base we’ll be releasing a very exciting product range that you can have at home, by the end of the year, so make sure you keep up to date with our journey.
